Puder's Glühwein (Mulled Wine) from White Wine

Ingredients

• 4 piecesBoskoop apples
• 100 gmarzipan paste
• 30 gchopped walnuts
• 20 graisins
• 0,5 tspcinnamon
• 20 gbutter
• 1 tbsplemon juice
• 250 mlmilk
• 100 mlheavy cream
• 2 piecesegg yolks
• 40 gsugar
• 1 piecevanilla bean
• 1 tspcornstarch

Preparation

1. 1Preheat the oven to 200°C (392°F) using conventional top/bottom heat.
2. 2Wash the apples and generously remove the cores using an apple corer.
3. 3Knead the marzipan paste together with the chopped nuts, raisins, cinnamon, and lemon juice.
4. 4Press the marzipan mixture firmly into the openings of the apples.
5. 5Place the apples in a greased baking dish and top each one with a small piece of butter.
6. 6Bake in the oven for about 25 to 30 minutes, until the apples are soft and the skins begin to crack.
7. 7For the sauce, bring the milk, cream, and the scraped seeds of the vanilla bean to a boil.
8. 8Whisk the egg yolks with the sugar and cornstarch, slowly stir in the hot milk mixture, and heat while stirring until just before the boiling point, until the sauce thickens.
9. 9Arrange the warm baked apples on plates and pour the vanilla sauce generously over them.
