Gewürztraminer – mild, Qualitätswein

Ingredients

• 500 gQuark (low-fat)
• 200 gButter
• 2 piecesEggs
• 250 gFlour (coarse/farina)
• 50 gSemolina
• 1 pinchSalt
• 10 piecesApricots
• 10 piecesSugar cubes
• 150 gBreadcrumbs
• 50 gSugar
• 1 tspCinnamon

Preparation

1. 1Whisk 100g of the butter with the eggs and a pinch of salt in a bowl until frothy.
2. 2Drain the quark well and stir it into the butter mixture, then quickly knead in the flour and semolina.
3. 3Let the dough rest in the refrigerator for about 30 minutes to achieve the right consistency.
4. 4Meanwhile, wash the apricots, carefully pit them, and place a sugar cube in the center of each fruit.
5. 5Shape the chilled dough into a roll on a floured work surface and cut into 10 equal slices.
6. 6Flatten the pieces of dough, place the apricots in the center, and form into smooth, tightly sealed dumplings.
7. 7Bring a large pot of water and a pinch of salt to a gentle simmer and cook the dumplings for 12 to 15 minutes.
8. 8Melt the remaining 100g of butter in a pan, add the breadcrumbs, sugar, and cinnamon, and toast until golden brown while stirring.
9. 9Carefully lift the finished dumplings out of the water, let them drain well, and immediately toss them in the hot buttery breadcrumbs.
